As for getting your old ship back there is no way. it is one of EvE’s main features: if your ship gets destroyed it is lost forever, although some of the modules might survive and can be found in your ship’s wreck. You should accept it as a natural part of your Eve life. Basically you should consider your ship lost the moment you click undock button as there is no real security outside of station. With this mindset even shiny loses are easier to get over with.
